We cook quality ingredients with fire and smoke to produce tasty dishes with a distinctly British feel. Think of us as halfway between a great British summer barbecue and a smokey Texan food truck.
‘Barbecue’ means a lot of different things to different people. To us, it is the simple process of cooking over charcoal and wood, turning meat and vegetables into charred, smokey delights.
But it’s not just about the food, we love the social, informal experience of getting together around fire to share food and good times.
Oh....and as science geeks, we love to learn why and how barbecue creates such distinct flavours and textures. We hope to share this with all those who enjoy our food.
With a background in sustainability and conservation, sourcing is big deal for us. We always aim to use ethically sourced, British produce from suppliers we trust. We look forward to collaborating with individuals and businesses who are equally mindful of these values.
Ultimately, we hope to have a permanent location where people can enjoy our food with great drinks in a relaxed space. We want to create an environment that allows people to be immersed in the magic of barbecue, whilst sharing great times with friends.
Our menu aims to showcase British ingredients, prepared with care, over time to produce tasty, balanced dishes. We are enthusiastic cooks rather than chefs so our menu aims to let the ingredients and the smoke do most of the talking.
Having spent a summer travelling the US in the name of ‘research’, we developed a real taste for authentic American barbecue. Our menu looks to embrace their traditional cooking techniques and combine them with a more varied set of ingredients to create a more British barbecue menu.
A homemade beef and pork sausage, nicely spiced and hot-smoked over oak before being chargrilled to perfection. Served with winter slaw and house bbq sauce.
A light and lean meat, marinated, skewered and grilled over charcoal and wood. Served with lemon slaw and yoghurt in a warm flatbread
British lamb shoulder, smoked over oak to give a tender, rich and smokey treat. Served with baby gem lettuce dressed with redcurrant dressing.
Beef brisket seasoned our way then smoked over English oak for at least 10 hours, served with house pickles and house bbq sauce.
We at Billy Smokes are very proud to be the food residents at the Howling Hops Brewery's fabulous tank bar in Hackney Wick. Not content with serving their beer from cask, keg or bottle, Howling Hops built the country's first dedicated tank bar.
